Flat Iron Catering Company was founded in 2010 as a side project of the Orchard Street Chop Shop in Dover, NH.  Chef Chris "Koz" Kozlowski started this at the request of some of his diners to put his world-class food on their tables away from the restaurant.  We now specialize in authentic Cajun, Creole and Caribbean cuisine.  We can plan every aspect of your party and work with all budgets.

Our History

...better known to just about anyone as "Koz", is the mastermind behind Flat Iron Catering Company and Chef Koz's Crescent City Kitchen.  He was the former chef~owner of Crescent City Bistro & Rum Bar and Orchard Street Chop Shop, both in Dover, NH, since 2001.  CCB served authentic New Orleans Cajun~Creole food and Orchard Street Chop Shop was northern New England's first prime steakhouse.  Chef Koz's two establishments were touted as the leading restaurants on the seacoast with critical acclaim from many food writers and trade organizations.  Both restaurants received the coveted Wine Spectator "Award of Excellence" for having the greatest wine lists in the world.

Chef Koz got his start cooking at a camp in Wolfeboro, NH in the late '80's.  While attending college, he became Kitchen Manager at Hart's Turkey Farm then sous chef at the critically-acclaimed William Tell Restaurant in Waterville under Swiss chef Franz Dubach.  In 1996, Koz attended the prestigious Culinary Institute of America in Hyde Park, NY where he graduated as president of the Student Council in 1998.

After graduating, Koz took a job as a brewer for Shipyard Brewing Company at their brewpub called Federal Jack's in Kennebunkport, ME.  He became Head Brewer there for a few months when he decided to leave in 1999 to pursue wine making.  Koz moved out to Calistoga, CA for the remainder of the year to become a wine maker at Vigil Vineyards.  Here he picked up another aspect of the restaurant business.

In the winter of '99, Chef Koz moved back to NH where he took over at the helm of the kitchen at the Governor's Inn in Rochester, NH.  At 27, he became the youngest Executive Chef in NH and brought the Inn up to a 4-star establishment.  In 2001, he moved to Dover, NH to open up the Crescent City Bistro and then the Orchard Street Chop Shop in 2004.

On November 30, 2016, after a 15-year run in Dover, Koz sold the last of his two restaurants to spend more time with his family and expand Flat Iron Catering Company.  Today, he is in the midst of building Chef Koz's Crescent City Kitchen, a state-of-the-art mobile kitchen where he will be bringing his famous Cajun~Creole food to concerts, festivals and fairs all over New England.  Flat Iron Catering is also now available for your private catering needs as well.
